Read::Talk::Walk HEALTHY RECIPE

Biba B. leads wellness programs for a faith-based organization--educational workshops that attract many non-members and serve the information needs of entire communities. She's an avid walker who's also adept at using hiking poles. Biba recommends this fruit crisp as a healthy snack.

CRUST
1 cup whole wheat pastry flour
1/2 cup oat bran
2 cups rolled oats (more for crispy bars)
1-1/4 cup sucanat
3/4 cup canola oil (less for crispy bars)

FILLING
1 cup blackberries, fresh or frozen
1 medium Granny Smith apple, shredded
1/2 cup all-fruit blackberry jam

1. In a large bowl combine dry ingredients, then stir
in oil. Mix well. Set aside 1-1/2 cups crust mixture
for topping.

2. Press rest of crust into an oil-sprayed 9x13 inch
pan.

3. In separate bowl mix together filling
ingredients. Spread evenly over crust. Sprinkle rest
of crust mixture on top evenly covering fruit. Pat
down gently with your hands.

4. Bake at 350 degrees, 45 to 55 min. Top
will begin to brown. When cool cut into 2-inch
squares. Do not overbake.

Variations:
Experiment and make adjustments for moist or crispy bars according to your own taste
Substitute raspberries and raspberry jam for raspberry
bars, or blueberries and all fruit blueberry jam.
